Instructions:

  1. Rehydrate Mushrooms: Place the freeze dried mushrooms in a bowl and cover with warm water. Let them soak for about 10 minutes or until fully rehydrated. Drain and chop them if necessary.
  2. Sauté Onion and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until soft and translucent.
  3. Cook Rice: Add the Arborio rice to the skillet and cook for 2-3 minutes, stirring constantly until the rice is lightly toasted.
  4. Deglaze with Wine: Pour in the white wine and cook until it’s mostly absorbed by the rice.
  5. Add Broth: Gradually add the broth, one cup at a time, stirring frequently. Allow the liquid to be absorbed before adding more. Continue until the rice is creamy and cooked to your desired texture (about 20 minutes).
  6. Add Mushrooms: Stir in the rehydrated mushrooms, butter, and Parmesan cheese. Cook for another 2-3 minutes until everything is well combined and creamy.
  7. Season and Serve: Season with salt and pepper to taste. Garnish with fresh parsley and serve hot.

    Those freeze-dried mushrooms would be really handy to have in the cupboard instead of buying fresh mushrooms that go bad so quickly!

      They’re not frozen, but freeze dried. Freeze dried is amazing though! I love anything freeze dried.
