Lemon Garlic Peppered Chicken

I love chicken, so I wanted to make something delicious. Lemon chicken is one of my favorites, so I wanted to put my own spin on a lemon chicken recipe. Mine has a bit of a spice to it, so if you love spicier foods, this might be a great recipe for you. Not everyone will think it’s spicy. My daughters thought it was, but they loved it too.

Ingredients: 

  • 4 Chicken Breasts
  • 1/4 Cup Lemon Juice
  • 2 TBS Olive Oil
  • 2 TBS Minced Garlic
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 TBS Lemon & Herb Seasoning (I used McCormick)
  • 2 Large Potatoes
  • 14.5 Oz Can of Green Beans

Instructions: Make sure the chicken breasts are thawed out…Get out a 13×9 baking dish and spray with cooking spray. You can then put the chicken in the dish. In a bowl mix together the lemon juice, olive oil, minced garlic, salt, pepper and lemon & herb seasoning. Once mixed well you can brush this across the chicken. Then you want to turn the chicken around and get the other side too. Once that’s done you can cut up the potatoes and put them on beside the chicken and do the same with the beans. If you have any of the mix left you can drizzle it across the potatoes and beans as well. Cook this on 400 degrees for about 45 minutes or until potatoes are done.

    I am going to have to make this!!! I have made similar but not as healthy since it had a stick of butter in it. Sounds really good!

      I try to keep the butter out and replace with olive oil. 🙂
