Cheesy Bacon Egg Cups-Pete and Gerry’s Organic Eggs

Did you know that May is national egg month? Yep, I’m excited for this because I love eggs and love that they’re so good for you too. It’s also very important to pick out the right eggs for you and your family. Some of our families favorite eggs, are the free range eggs as well as ones that are organic as well. Finding the right eggs can be extremely important too. I love to make sure my family gets the best of the best, and Pete and Gerry’s organic eggs makes it simple.

Sister brands Pete and Gerry’s Organic Eggs and Nellie’s Free Range Eggs are a great choice for good eggs. As Certified Humane, Free Range eggs, the hens are free to roam outside, peck at the ground, dustbathe and act like real hens. I love that about these companies! It’s great to get eggs from places where you know exactly what’s going on. I love the fact that the hens are able to freely roam around. Those are where I love getting my eggs from!

I recently bought a package of Pete and Gerry’s organic eggs and wanted to make a recipe with them since this month is national egg month. What a great way to celebrate by making a recipe with their eggs, right?! There are many recipes I could think of with using eggs, but I wanted to make something a bit different from what I would normally make with eggs.

I thought making some egg cups would be a great recipe for using these Pete and Gerry’s eggs with.

What you’ll need

6 Pete and Gerry’s Organic Eggs

1/4 Cup Milk

Salt

Pepper

1/2 Cup Green Peppers

1/2 Cup Onions

3 Pieces of Bacon

1/3 Cup Shredded Cheese

The first thing you’re going to want to do, is to crack open the six eggs and put them in a bowl.

Then you’re going to want to add the milk, salt and pepper. For the salt and pepper, I just added a pinch of both. You can add more or less if you’d like. I find this to be a good amount. Take a fork and mix all of these up really good.

Cook up the bacon nice and crispy. Once it’s cooked, take a paper towel and get most of the grease out by patting it dry. Than you can crumble up the bacon in to smaller pieces. Also chop up the peppers and onions as well.

Once you have all those ready, add them to the egg mixture. Mix all those ingredients up real well.

Next you’re going to want to spray a cupcake/muffin pan down with cooking spray. You can now add the egg mixture in the pan. You should be able to get 12 egg cups out of the mixture. You’re going to want the oven on at 350 degrees. You want to cook these for about 25-30 minutes.

Once the time is up, you can pull them out of the oven and enjoy!

I thought these turned out amazing, and I can’t wait to make more for my family.

Last week, Pete and Gerry’s Organic Eggs filed a petition with the FDA to update its definition of ‘healthy’ to include eggs. The current definition includes foods such as low-fat toaster pastries and sugary cereal, but excludes the nutrient dense egg. In a partnership with Registered Dietitian Keri Glassman, they hope to help share the health benefits of eggs, and urge the FDA to become more aligned with the current Dietary Guidelines for Americans, which recommend consuming eggs in all three model diets. 

If you’ve never tried Pete and Gerry’s eggs before, I highly recommend them. They’re very delicious and great for you too.

    I think free range organic eggs taste SO much better than regular eggs. You can even see the difference in the quality if you crack the eggs open and compare the two side by side.

    Such a nice, easy recipe! I don’t make breakfast a lot, and I am guilty of being hungry in the morning. This is so convenient to make!
