Black Bean Salsa Stuffed Sweet Potatoes

I’m very excited that fall is almost here. I do love summer, but I also really love fall. When the leaves change and the weather gets a bit cooler, that’s what I love. This is a great time of year to start making some hot/warm foods too. I have been trying to make healthier meals for my family, and since they all love fruits and vegetables, it’s perfect. That means we can make a great healthy meal that we’ll all enjoy. S&W Beans are great for making healthy meals for my family. They have a wide variety of beans to choose from too. We use beans in many recipes, so we enjoy using S&W Beans.

Since it is getting cooler out, I wanted to make something that went well with the cooler weather as well as something that would go with fall. When I think of fall, sweet potatoes always come to mind. I decided to make something with the S&W 50% less sodium black beans. I’ve tried many varieties of these beans, and they always look and taste great. It’s nice to have foods around that are healthy that actually taste great too.

Since I love sweet potatoes, I decided to make black bean salsa stuffed sweet potatoes.

Ingredients: 

1 TBS. Olive Oil

6-8 Sweet Potatoes

Can of S&W Black Beans

Can of Corn

10 Cherry Tomatoes

1/2 Cup Green Peppers

1 Small Red Onion

2 Garlic Cloves

Half a Lime for Lime Juice

Cilantro

Salt & Pepper

The first thing you’re going to want to do, is to put the oven on 400 degrees. Once the oven is ready, you can cook the sweet potatoes for 30 minutes. After 30 minutes, take them out and poke holes in them with a fork. Put them back in the oven for another 30 minutes to cook.

While the sweet potatoes are cooking, you can start on the other ingredients. You’re going to want to chop up the onion, pepper and garlic. Than you can cook them in the olive oil for a couple of minutes, or until they’re soft.

Next you can add in the corn, black beans and tomatoes. Make sure to drain the corn, rinse the black beans and cut up the tomatoes.

Now that you have everything in the pan, you can mix it up. Now you can add in the lime juice as well as a pinch of salt. Now you can put this a side until the sweet potatoes are done cooking.

Once the sweet potatoes are done cooking, you want to cut a slit right down the middle of them, but make sure not to completely cut to the edge. You want to leave some room. After they cool off, you’ll want to scoop out some of the inside so you can add the filling.

I added some salt and pepper to the sweet potatoes before filling them. You don’t have to add any salt or pepper, but I think it gives it more of a taste. After that, I filled them with the mixture. Once I was done doing that, I added some cilantro on top. I love cilantro, and it gives it a very good taste too.

This is the first time I’ve stuffed sweet potatoes before, and they turned out great. The S&W Beans made the salsa stand out, and it was amazing! I’m looking forward to making more recipes with all of the S&W beans. There are so many recipes I can already think of to make with them. My family and I are excited to see what I can come up with next. I’m glad these products can help make our dinner time more enjoyable.

    That is serious power food. Sweet potatoes are already a super food, but when you add in the extra protein of the beans and all those other flavors, you’ve got an amazing dish!

    I love sweet potatoes but I get bored of cooking them the same way every time. This is definitely not a combo I’ve had before but I think it sounds like a great recipe to try out!

    This looks like a really interesting recipe! My son and I both love sweet potato fries but we’ve actually never had the straight sweet potato. And we both love salsa so this is something that we should definitely give a try. It sounds and looks like a great fall –! Thank you for sharing!
