Thai Peanut Noodles

I don’t make Thai food often, but I wanted to make something for my family to enjoy. Since they all love noodles and vegetables, I decided to make some Thai noodles. This recipe is actually very simple. If you love the Thai noodles and you love vegetables, I hope that you’ll enjoy this recipe.

Ingredients: 

  • 2 Cups Sugar Snap Peas
  • 6 Mini Peppers
  • 1 Garlic Clove
  • 1 TBS. Olive Oil
  • 8 oz. Thai Noodles
  • 1 Chicken Breast

Sauce:

  • 1/4 Cup Soy Sauce
  • 2 TBS. Peanut Butter
  • 1 Lime (Juiced)
  • 2 TBS. Honey

Directions: Put the olive oil in your wok or if you don’t have a wok you can use another pan. Then you can fry up the peppers, garlic and snap peas. Make sure to cut up the garlic and peppers. While those are cooking, you’ll want to cook your Thai noodles. You can look at the directions on the box on how to cook them. Meanwhile, you can mix up the sauce. Take the soy sauce, peanut butter, lime and honey and mix all those in a small bowl. Once everything is cooked up, you can put the noodles in with the vegetables. Next you can pour the sauce over it and mix it up. You don’t have to use all the sauce either, so make sure to taste it first. I like to add a little to my bowl instead of mixing it all up first too.

That’s all there is to it. It’s a very simple dish. My husband and daughters also enjoyed this. Both of my girls can be picky sometimes, so I was happy when they loved it. It will be a dish that we will be making more often too.

    This looks like a another delicious variation of Asian noodles and I like it. Thai food has always the right amount of spice for me and I’ve never hesitated when it comes to picking food from their menu. This one’s great!

    Yummy recipe! I love peanut noodles – this recipe seems very simple. The sauce is also simple too. I have a recipe with 8 different ingredients for the sauce alone!

    Good to know that your kids can be picky and still loved this dish as it is hit and miss with making a new dish for my kids. I’m all about adding lots of veggies so this looks not just tasty but right up my alley to keep health conscious.
