Beef Stew Over Noodles

I have two daughters who actually love their vegetables! Can you believe that?! I’m very happy to have children who love to eat healthy. I love to use my crock pot when making meals for my family. We love to throw in some meat and vegetables. This is where my recipe came from. I wanted to make something that my family would be able to enjoy together. My oldest daughter Mercades, loves anything with noodles, so I wanted something that had noodles and was healthy as well. I used the Healthy Solutions Spice Blends hearty beef stew and mixed up some vegetables and put them over noodles. This is a very simple recipe and it’s great for busy parents.

Ingredients: 

  • 1 lb. beef stew meat
  • 10.8 oz bag of frozen peas (I used Birds Eye)
  • 14 oz. bag of frozen carrots (I used Birds Eye)
  • 3 medium russet potatoes (cut up)
  • 3 cloves of garlic (chopped)
  • 1/4 cup chopped onions
  • 14.5 oz can of diced tomatoes
  • 12 oz. bag of egg noodles
  • Soy Sauce
  • Salt (for taste)
  • Pepper (for taste)
  • 1 1.25 oz. pack of Healthy Solutions Spice Blends hearty beef stew

Instructions: 

Put the beef stew meat, frozen peas, frozen carrots, russet potatoes, cloves of garlic, chopped onions, Healthy Solutions Spice Blend and diced tomatoes in a crock pot. Turn the crock pot on high. You shouldn’t have to add any water to the crock pot since some of the ingredients will make water. You can always add a little bit if you’d like. Cook until the potatoes are soft enough to put a fork through. It could take anywhere from 3-6 hours and possibly longer. Cook the noodles according to the package. You don’t want to cook the noodles until everything else is close to being done. Once everything is done, take some noodles and place on a plate. Put the ingredients from the crock pot over the noodles. Then you’re going to want to add a little bit of soy sauce on top. The amount all depends on how much you like. I usually put about a tablespoon and sometimes more. Use salt and pepper to taste if you’d like.
