Brown Sugar Cinnamon Granola Crusted Chicken

I love a good recipe challenge, so when I was offered the chance to make a recipe with the Golden Girl Granola, I accepted. I went with their original granola because I knew I’d be able to make anything with this. This granola has coconut, honey and almonds. I’m very excited to be able to do this recipe challenge.

I wasn’t sure on what to make, as I don’t use granola to often. Since my family loves to eat chicken, I knew I would have to come up with a recipe that had chicken in it. This is when I came up with the brown sugar cinnamon granola crusted chicken.

Ingredients: 

  • 4-6 Pieces of Chicken Breast Strips
  • 1 Cup Golden Girl Granola
  • 1/3 Cup Brown Sugar
  • 2 TBS Butter
  • 1 Tsp Cinnamon
  • 1 Egg Yolk
  • 1/2 Cup Flour

Instructions: In a small bowl mix the butter (melted), brown sugar, cinnamon and granola. Next you’ll want to rinse all the chicken off with water. After rinsing a piece of chicken off with water, roll it in the egg yolk, then the flour, then egg yolk again and then the granola mix. You’re probably going to want to line a piece of aluminum foil on the pan too. This will help so it doesn’t stick to your pan. You can try spraying the pan, but it might still stick. Sometimes I have to lay the chicken on the pan and sprinkle the granola mixture over it too. It doesn’t always want to stick well, so do that if you’re having trouble. Next you’ll want to bake them at 425 degrees for roughly 20 minutes or until the chicken is done.

      You’re welcome. It was delicious! Even my youngest loved it and she usually doesn’t want to try anything like it. I was so happy so loved it!
