Chicken Bacon Ranch Tater Tot Casserole

Ingredients

  • 1-2 cups cut up chicken breast
  • 1/2 cup ranch dressing (the liquid ranch in a bottle)
  • 8 oz. shredded cheese (your choice of kind)
  • 4-6 slices of bacon (add more or less as you wish)
  • Tater Tots
  • 1 cup sour cream
  • 1/4 cup milk
  • 1 26 oz. can of chicken with rice soup
  • 15.25 oz can of corn
  • 15 oz. can of peas

Instructions 

First you’re going to want to cook up the chicken. I usually cook mine in a frying pan. While that’s going you can get the rest of the items ready. Get a 13×9 baking dish or something close to that size. Put the corn, peas, chicken with rice and the chicken in the baking dish and mix it up. Make sure to drain the peas and corn before putting them in.

IMG_2570In a separate bowl mix the milk, sour cream and ranch together. Pour that in with the rest of the ingredients that are in the baking dish. Mix that all together. It will look a bit soupy, but that’s okay. Once it cooks it won’t look that way.

Next you’re going to want to top it off with the tater tots. Then sprinkle the cheese over the top. Next you will want to cut up the bacon in small pieces and sprinkle on top as well. I use already cooked bacon with mine.

The oven can be preheated to 400 degrees or you can check the package of tater tots and cook at that temperature. Bake for about 20-30 minutes or until the tater tots are golden brown. ENJOY!

      It’s the liquid ranch dressing in a bottle. You can use as many tater tots as you want. I never leave space between the tater tots. I cover the whole top.

    Have you tried green beans instead of peas? I don’t see why that wouldn’t work anyway! Do not like peas!

      I usually used canned ones but I don’t see why not. I would think they would work just as fine.

    One thing i isn’t see in the directions is spraying the 9 x 13 pan. I didn’t and I wonder if I should have.

      No, you don’t have to spray the pan. I’ve never had an issue with anything sticking.

      I made it and it’s very good ..I skipped the peas. The next time I make it I will bake it first without the cheese and bacon and then add that in the last 10 minutes or so ..we like the tots crispy.

    Is there a substitute that you would recommend instead of ranch dressing. My daughter is allergic to eggs so she can’t have ranch dressing. Thoughts??

      You could try with just about anything. I have made something similar to this but used chicken with rice soup instead of the ranch, milk and sour cream. But I also used hamburger instead of the chicken too.

      Would the ranch packets have eggs in them? If not I would just mix up some or use extra sour cream and add the ranch powder. Then you still have the ranch flavor. Plus I think the powder has more actual flavor than the liquid.

      I made this for supper so I put the chicken breast in the crockpot all day with some chicken broth. Worked great!

      It shouldn’t be soup at all. You didn’t add or leave anything out did you? It definitely shouldn’t have been soupy at all.

    I think this would have been good if there were no peas. All you can taste are the mushy peas so I spent tons of time trying to pick alot of them out. Next time I would also drain most of the liquid from the soup

    Would this work as a freezer meal? I just had this made for me after a surgery and it was yummy! I’m going to a freezer meal swap and wonder if this would work???

      I’m not sure if it would be good for a freezer meal because of the ranch and sour cream. Usually when I make meals with ranch dressing I try to make sure it’s all ate the day it was made.

      Sorry to hear that. There will always be a bit of liquid but you shouldn’t have it that much. Don’t know what to say cuz it’s never been “soup” for me.

      It there is too much liquid, you could add a little gravy flour or plain flour to thicken it. Add the flour, stir though thoroughly and put it back in the oven for 10 – 15 minutes or in the microwave for a few minutes.

    Increase the cooking time by about 10 minutes. Be sure and drain the vegetables (corn and peas). Also let stand a few minutes and it firms up.

    I’m Australian and unfamiliar with Tater Tots. Reading through the previous comments, it seems they’re a packet item?

      Yes. Tater tots are in a bag and frozen.       You could always try adding more rice or even try using the dry packets of ranch instead of the liquid. I’ve always made mine this way because I have a daughter allergic to dairy. This is the reason I actually use the chicken and wild rice soup.

    This is the MOST AWESOME recipe!!!!!!!!!!!!!!!!!!
    I love it!! I even cheat more and I use the white meat chicken you can buy in a can by the tuna fish. I usually add a small can of peas. I have made it without the corn too but that is not nearly as good. I have frozen mine and I think it is still pretty tasty when I eat it later. Although it never stays in the freezer very long… 🙂

      You could maybe add more rice or use a cream of mushroom soup. I use the chicken with rice soup only because one of my daughters has dairy allergies.
